[h=2]Directions of Turkiesh Meatballs (Tabrizian Meatball):[/h]Ingredients: (4 servings)
500 gr Lamb and Beef,Mince
100 gr Yellow Split Peas
100 gr Rice
100 gr Chickpea Flour
250 gr Herbs Savory,Leeks (Cleaned and Chopped)
1 Large Onion, Grated
1 Tablespoon Spice(Clove,Coriander ,Cinnamon,Cardamom,Cumin ,Pepper ,Rose, Ginger and Indian Nutmeg )
Ingredients for each inside Meatballs:
2 Tablespoons Fried Onions
2 Tablespoons Barberry
50 gr Walnuts
1 Cooked Egg
4 Dried Yellow Plums
Ingredients for Sauce Meatballs :
3 Tablespoons Chopped Onions
2 Tablespoons Tomato Paste
100 gr Oil
1/2 Cup Verjuice or Lemon Juice
4 Cups Water
150 gr Plums
1:Clean and wash yellow split peas.
2:Clean and wash rice ,half cooked rice.
3:Mix minced meat, yellow split peas,onion,eggs,spice,salt,pepper,turmeric and saffron in one bowl and stir very Well.
4:Add rice and herbs to mixture and stir again.
5:When ensure about the ingredients are sticky, rest for 15 minutes.
6:For preparing sauce add fried onions, tomato paste,oil and spices into a pot until oil is changed to red.
7:Then add salt ,pepper and water and let boil.
8:Wet your hands with cold water, forming all ingredients like a ball.
9eepen middle of the meatballs and fill with fried onions, barberry, walnuts, yellow plum and hard cooked eggs.

11our prepared meatballs into boiling sauce.
12:Finally add plums and verjuice into pot and let cook meatballs on medium heat for 2 hours.

4 Cups Rice
500 gr Dates
250 gr Noodles Special For Rice
1 Cup Oil
5 Cups Water
500 gr Meat, Minced
2 Medium Onions,Grated
1:Add rice to boiling water until cooked. 2:Add noodles,drain the rice immediately then allow rice to steam. 3eel and chopped onion and fry in oil until golden. 4:Add minced meat to onion,fry until color changes. 5:Separated kernel of dates. Fill dates with meat,then fry in oil . 6:Finally pour noodles and rice in one dish,then decorated with dates and fried onions. Note:
Dates Rice is from Lorestān,one of cities from Iran .That’s served in Nights Nowruz.
Cooling ice cream made with nuts such as pistachios,hazelnuts and almonds are very popular all over the Mediterranean. You can also buy creamy almond milk in cartons in some Middle Eastern stores,which will make this whole recipe much faster.
[h=2]Directions of Almond Ice Cream:[/h]Ingredients4 servings)
40 gr Blanched Almonds
475 ml Full-Fat Milk
180 ml Double Cream
3 Egg Yolks
100 gr Caster Sugar
1 Teaspoon Kirsch(or Liqueur of your choice)
1ound the almonds into a puree.
2:Add milk and heavy cream and mix thoroughly together.
3our the almonds mixture into a saucepan and bring it to the boil.
4:Remove from heat and allow to cool.
5:In a separate bowl,mix egg yolks,sugar and kirsch for 5 minutes.
6:Slowly pour the cooled almonds milk into the yolks and mix well with a wooden spoon.
7:Return the mixture to a low heat for 5 minutes,stirring constantly and without letting it boil.
8:Remove from the heat and allow to cool again.
9:Strain it carefully through a sieve into an ice cream maker and freeze until the ice cream is very firm.
10:If you do not have an ice cream maker,pour the mixture into a plastic container with a lid and place it in the freezer.
11:Mix well with a fork every hour or when the edges of the ice cream are beginning to solidify,until the ice cream is set and crystal-free. Note:
Almond & Pistachio Ice Cream: Prepare the basic recipe,then before freezing add a handful of chopped pistachios for a crunchy texture.
Almond & Pine Nut Ice Cream: Prepare the basic recipe,using 30 gr almonds and 30 gr pine nuts.
Almond & Hazelnut Ice Cream: Prepare the basic recipe,using 30 gr almonds and 30 gr skinned hazelnuts(toast them briefly in the oven,then wrap in a clean cloth while still warm and rub vigorously to remove the skins).
Almond & Raisin Ice Cream: Prepare the basic recipe,adding 3 tablespoons raisins,soaked in kirsch,to the mixture just before freezing.
Almond & Amaretto Ice Cream: Prepare the basic recipe,replacing the kirsch with 1 tablespoon amaretto liqueur and 4 crumbled amaretti cookies. Bear in mind that the extra alcohol in the amaretto will prevent the ice cream from becoming entirely solid.
This very light,cleansing salad is the perfect dessert to serve at the end of a long and heavy meal. It looks especially dramatic when prepared with blood oranges.

10 Large Oranges
4 Tablespoons Slivered Almonds
Ice cream,To Serve
Amaretti Biscuits or Toasted Slivered Almonds,To Serve
